National Chocolate Chip Cookie Day

|

It’s fun to peruse lists of obscure “holidays” to see what wacky things are included.

Take today, for example. Who knew that May 15th is National Chocolate Chip Cookie Day? All I can say is……….yum! They’re up there at the top of the list of my favorite cookies.

Here’s my tried and true recipe:

1 cup shortening
1 cup granulated sugar
1/2 cup firmly packed brown sugar
2 eggs
2 teaspoons vanilla
2 cups unsifted flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts
1 package (12 oz) chocolate chips

Beat shortening, eggs, sugars and vanilla until light and fluffy.
Add dry ingredients; blend well.
Stir in nuts and chocolate chips.
Drop from a teaspoon onto ungreased baking sheets,
roughly 2 inches apart.
Bake in 375 degree oven for 8 to 10 minutes (until edges are golden).
Makes approximately 8 dozen cookies.

(These are slightly crunchy…not chewy.)

Though I rarely have sweets in the house anymore, if a batch of these showed up, I’d definitely munch! (Hmmm….perhaps this calls forĀ a quick round of baking.)

Enjoy!
